We all know that actresses and models are body-conscious, and sometimes go to absurd lengths to maintain their camera-ready stick-like figures.

But once you get a little further along in life, body-conscious often happily gives way to simply health-conscious. Such was the case for Bea Arthur, who, as a famous senior citizen, ate healthy but didn’t sacrifice taste, eliminate carbohydrates altogether, or stop drinking water for 24 hours straight.

A recipe for Bea’s delicious-sounding vegetarian breakfast appears in Frank Decaro’s new book, “The Dead Celebrity Cookbook,” and it is as follows:

Bea Arthur’s Vegetarian Breakfast

(Serves 2)

1 tablespoon margarine
2 medium tomatoes, sliced
¾ cup chopped fresh mushrooms
Salt and pepper, to taste
4 slices bread, toasted

Preheat oven to 250.
Melt the margarine in a small sauté pan over medium heat.
Add the tomatoes and mushrooms, and sauté until soft, about 4 minutes.
Season to taste with salt and pepper.
Put some tomato-mushroom mixture on each piece of toast.
Heat in the oven for 2 minutes before serving.
