On this Bastille Day, I’m doing the cooking in the kitchen. Out here in here Colorado they don’t appear to have any Bastille Day celebrations like they do back home in New York City — or like they had in Paris earlier today. Instead, this Francophile will have to make do with whatever they have at the King Soopers for ingredients.

Although I’m not sure what I’ll be making today, except for knowing that it will be easy and will not come from my prized book Mastering the Art of French Cooking, because A) I left it at home, and B) I’ve never opened it because my kitchen is too small for such things. However, I do know that whatever I do whip up, it will be an homage to my French roots.

There may never be another Julia Child, but we can all pretend from time to time with easier versions of the French food she introduced to Americans. Here are six easy-peasy dishes, with their recipes, to boot, that you may want to try making today in honor of La Fête Nationale.
